pound ur chicken breast out to abt 1/4″, rub 1/2 packet of taco seasoning on both sides, put 1 TBSP (more to ur liking) salsa n middle, sprinkle shredded cheese in middle, roll up and stick w a toothpick. bake 30 min or until chicken is done.
while chicken is baking:
put 2 c water, 1/2c salsa, and rest of taco seasoning in pan, bring to boil, add 2c instant rice, cover, turn off heat and let sit till chicken is done
